Guar is a legume-type plant that produces a pod, just like a green bean. In the pod there are Seeds that upon heating, open exposing the endosperm and meal. The endosperm is purified to get a product known as Split. The exposed endosperm contains a polymer that is used for thickening industrial and commercial fluids. The polymer is a polysaccharide material known as polyga lactomannan. The polymer contains high viscous properties and to use that, splits are processed in guar gum. This gum can increase viscosity when hydrated with fluids, similar to the action of Starch.
